During my reasearch phase I tried a Ginger & Lemon Beer by the Humpty Dumpty Brewery. It was a Grain beer flavoured with Lemon & ginger but used no hops. Now how does the lack of hops effect the length a beer will keep. I was thinking of useing Maris Otter, Crystal Malt and Grated Ginger root. Would that work and would it keep without hops.
