Looking to brew my wheat beer again. Looking forward to this as I really liked the first http://www.thehomebrewforum.co.uk/viewtopic.php?f=21&t=49051 but believe a few tweaks will make it special. Keeping the Saison liked the spicy notes it imparted, but will look to increase the orange peel. However, I would prefer more body so will take Pittsy's advice and step mash 63c for 20 and 71c for 40 before mashing out. Hopefully this will still give a dry'ish brew but will impart more body. Another one to look forward to. :
