Mash has 30mins to go, light rain is turning to sleety snow - still very light hopefully it`ll blow over, boiler has its umbrella over and tun covered with a dust sheet :D

So my new years brew - IPA sort of style with new world hops, going for 46litres today :thumb:

New Empire IPA 46litres 5.8%

8kg Pale Malt
400g Crystal Malt
1kg Sugar

50g Magnum - 90min boil
30g Magnum - 10min boil
25g Ahatanum - 10min boil
25g Ahatanum - 5min boil
25g Ahatanum - 1min boil
25g Ahatanum - 30min steep @ 80degrees

Expected OG:1049
Expected FG:1006
IBU: 50.9
SRM: 9.9
Expected ABV: 5.8%


Using sugar to up the ABV, 8.4kg of grain is right on the limit with my tun, us-o5 starter from yeast from my last brew will be pitched :thumb: Pics to follow - weather looking stable so fingers crossed :whistle:
 
Nice one Rick! Been meaning to try those Ahatanum in a brew with some Motueka.

46 ltrs .. have you updated your boiler? I missed that. Good luck with it .. and with the weather. I have 55 ltrs of my last brew to rack into secondary at some point today .. then I think I'll get planning my next, feel a stout coming on! :D
 
Brewing outside with the brolly up to stop the sleet..... :pray:

sounds like your in the Artic Rick....keep a lookout for polar bears they may like a drop of IPA... :rofl:
 
Boil finished, light rain but not to bad :thumb:
Few pics, mashed in at 7ish, umbrella sellotaped onto hanging basket seemed to do the trick :lol:

Hops and beer from the exeter brewery http://www.theexeterbrewery.co.uk/ i`ve had a couple before but not the stout or ferryman bitter - will try tonight :drink:

Boiled the sugar seperatley and then added to wort for last ten mins of boil.

That sounds like a great combo :cheers: The ahatanum smell awesome - spicy and slightly floral and citrusy, but not overly citrusy like cascade so looking forward to this one..........and the next.......... :whistle:

Looks a good brew too I have yet to try ahatanum.

Sorry it does read like I got the hops from them :oops: I only got the beer from them - hops from the malt miller. I`ve had avocet on tap in the fat pig in exeter and it was really good, also had the county best which is a nice bitter. I`ll review them when I drink them :thumb:
 
Nice, will have to give 'em a try - I would assume they sell it in Tuckers Maltings, as it sounds like that's where they get their malt.

Ahatanum - loverly hop!
Jaipur, Punk etc - I used it in three brews last year. Yours should be superb!
I hope you have got a suitable brew on hand to congratulate yourself on your outdoor activities! :drink:

I got mine from exeter farmers market - I`d bet a leg that tuckers sell them though - great beer shop, good price on malt but special malts by the kg are a bit pricey :( otherwise I`d use them for all my malts rather than just sacks of pale.
 
All done and yeast pitched, quite suprised at the lovely golden colour - bit darker than I thought it would be but looks lovely :cool: 46litres at 1046 so very happy - I find us-05 ferments quite low so hoping for around 5.5%.

The US-05 has only just finished and i didn`t have time to bottle today so I syphoned into clean FVs and dry hopped each FV with 50grams of liberty :D

Will leave this till at least Tuesday before bottling, how long could I leave it though? I may not get time Tues so may have to leave to thurs or fri would this be OK?
