after wine fermentation

Hi I have a Solomon Grundy medium wine that has finally finished fermenting, the kit says agitate until all the CO2 has gone and that should take 2 hours, I realise none of this is an exact science, but after agitating every 20 minutes over 2 hours there is still a lot of gas coming off, should I just keep going until I don't get any more bubbles? Or call it a day and add the finnings to clear it? The mix has definately finished fermenting and has a hydrometer reading of 992, the kit says 995 or less just surprised how much is coming off.

degassing is a daily think just take the airlock out and give a good swirl round every time you pass the wine personally i never degass wine because i cant be bothered
 
Don't get too hung up on degassing. But do put the bung back after you degass or add finings. I don't bother with an airlock after degassing, just a bung, but it doesn't matter, just make sure the DJ is sealed.
