So what I've taken from the above discussion so far is that everyone does it differently!

Well I did 90 mins for both as the recipe suggested, and although she is very understanding, my wife did comment that it took a long time! So maybe I'll be looking to try shorter instead!
That's the very reason I don't advocate throwing out questions on a forum. There are no short cuts to making good beer. That is the reason I put in the link to your own UK master brewer of 30 something years Tim O'Rourke.
Doing your own research and reading what brewers advocate, both successful home brewers like Gordon Strong and George Fix, as well as commercial brewers like Tim O'Rourke, Dave Miller, there are plenty of other authors also like Palmer and Colby etc.
Brulosophy Marshall Schott isn't a brewer and doesn't back any of his ideas with science and doesn't pretend to.
Another link regarding the importance of the boil.

Anyone who is time short would be better off doing an overnight mash and doing an adequate boil the following day.

While I agree that doing your research and ultimately making up your own mind about how you want to brew, getting views from a variety of sources is useful. Also the links you have provided are very useful thank you, I wouldn't have had them if I didn't post on this forum.

And conversely you wouldn't have had them if I didn't post on this forum.wink...

Very interesting reading. In my AG days I mashed until the Iodine starch test came out brown. Boiling in the Bruheat was a protracted affair due to the simmerstat not allowing a constant rolling boil. 2 hour mash and 2-3 hour boil wasn’t unusual. These newfangled ways of brewing give me hope that I can go back to AG without costing a fortune in power if I bought an all in one system.
