adding sugar?

hi, gonna be making an irish red ag today. the recipe im using is for 5gal. I wanted to increase the batch to 6 gal, but I only have enough grain for 5gal recipe. I have a pound of dark brown sugar and a pound of honey in the cupboard, could these be used to bulk it out without drifting from intended final flavour too much?
 
The honey would impart scenty type odour which would be ok, but the dark brown sugar might be a bit overpowering. White sugar would be ok - I often use 500g of ordinary table sugar in my AG brews.
 
If you add sugar it'll lighten the body of the beer as well as upping the ABV. You can mash a bit higher to compensate for that. I've used a mix of white and molasses sugars in a French amber ale and it's nice. If you're trying to get a full extra gallon you might end up using quite a lot of sugar. You could do something in between and just add a few extra litres with a little sugar. Lots of sugar isn't really authentic for a UK ale.

I'd go with the honey. If it's a mild honey like clover most, if not all, the honey flavor and aroma will be driven off during the most active time of fermentation.
 
yea, didn't wanna lose the body, added the honey, and kept it at 5 gal. I like my reds malty lol
