I have brewed a Wilko Spicy Cab. It has gone well, I have cleared and racked it. It tastes ok,and will need more time,but... It is VERY dry. I read somewhere here that it is ok to add red grape juice to round it out. I like a dry wine, but this does need slightly tweaking I think.

Comments and advice please.

yep you could add the grape juice to sweeten it but you will need to stabilise the wine with potassium sorbate & campden tablets first or else the yeast will ferment the grape juice leaving it dry still.

I have used the stabiliser that came with the kit, does it need to be done again? And where do the Campden tablets fit in, please?

if you have stabilised it with a kit stabiliser it should be ok to add gj,campden tabs with pot sorbate are used to stabilise wines that don't have a stabiliser eg fresh fruit wines. ken.

So,to recap, add the GJ and Campden tablets. This is a 30 bottle kit. How many Campden tablets would you add?

Sorry to sound dopey, but I am back to the brewing game after a ten year gap!

The stabaliser in the kit is Camden and pot sorbate, you won't need to add either, just put in the GJ to taste

Brilliant! Thankyou for that. I just learned something there. You just told me what I need to know. Thanks again.

Love this place. Cheers
