so, i have my lagers all bottled and waiting patiently under the stairs... my toffee apple turbo cider is bubbling away , very nicely, at least one a second... so thought i should pull my finger out and get my next one on the go....

its a John Bull, Traditional English Ale, i made it with 1kg of Muntons beerkit enhancer, whisked it into the contents of the can, with a kettle full of boiled water.... this gave it a huge head, about 2" thick, aded cold water up to 23 n a half litres, checked temp, 20c and added the yeast. ive heard that the John Bull yeast isnt very good, so i added a teaspoonful of some wine yeast i have, hopefully not messed it too much, but, there you have it... now sat in my fv, with airlock... just need to get a pressure keg from lhbs, unless tesco get any more in..lol..

also, going to do a wow shorly, just need a water bottle from work....

ive heard that the John Bull yeast isnt very good, so i added a teaspoonful of some wine yeast i have, hopefully not messed it too much, but,
I'd advise against doing this again as wine yeasts have a much higher attenuation than beer yeast, ie, if you're expecting it to finish around 1.006 it could well go below 1.000, so your kit may end up tasting thin and too alcoholic. The wine yeast will also impart a different flavour profile to the beer than it should have had.

Too late now, never mind, let us know how it turns out, should be o.k :drink:
 
d'oh... lol.. thanks for that... it was a cheap kit, and as long as it tastes ok, ill drink it.... not that im an alchy , honest..... ( even though i am having a wee drink as i type this )

yes, definitely got the bug at the moment.....

i have my ciderish dj sitting here in the living room, just going,pop,pop,pop,pop...... and looking like a larva lamp..lol... keep stopping and just watching it... had to clean out the airlock before and it smells absolutely gorgeous.... wanna drink it now....lol...
 
just as a quick update, the english ale is fermenting well... bubbles for between 5 and 10 seconds about every ten seconds.... scared the **** out of me last night when it started, was just dozing on the couch..lol... it does smell very nice, a bit black treacle smell.... yummy...

and topped up the tc... its now going mental again...
 
The wine yeast will also impart a different flavour profile to the beer than it should have had.

update and question time ... the JB ale is sitting chilling out at the moment, it has a slight bubble about every 15 minutes and theres still bubbles on the surface ( see through fv's are great) .... im leaving this until the 16th before testing it, then will do it again after a couple of days later, see how the readings are..... the smell from the airlock is still rather nice, still black treacle kind of smell....

now the question.... i am going to put this in a pressure barrel, now i just syphon it into the barrel as i would into a secondary fv?.. correct?? ... to carbonate i will add some sugar , do i do it as i did my lager?, melt it into some water or a bit of the ale, add to the barrel and syphon into this to mix properly? or is there anything else i can use?... as i said, it smells of black treacle, could i use some of this?.. would i mess the brew up ?? any info greatly recieved...
 
You can use treacle, it may need slightly longer to carb up properly than sugar, not ages though.

Use about 100g. It won't make a massive difference to the flavour, but it's up to you :)

and yep, everything you said is indeed true. I would avoid drawing ale out, mixing and putting it back in. you only need 100ml of hot water anyway.

Your beer is likely not fermenting, it still releases gas longer after fermentation. it will have bubbles too. but yep, take your readings :)
 
thanks for that... ill take a reading tomorrow then, i need to get some sugar for a WOW so will probably just use that then....

then ill be ready for my first 2 can kit.. woodfords wherry... just need another barrel for that though..lol..
