I started off a new cider just under 2 weeks ago.
I made a solution of brown sugar and water, to up the gravity to 1.060
I checked it kicked off to a good ferment and just forgot about it.
Checked tonight and the gravity for both is at 1.000
And to my surprise, looking at the bottom of the demijohn, I could already see the lees THROUGH the liquid.
My first cider has been bottled and aging away and it's still a murky, cloudy, scary scrumpy looking thing.
And it's only 5.5%
So yeah, I'm just really surprised by how different things are turning out.
