75% maris otter
25% carared

loads of citra, us 05.

Has anyone used carared in these quantities? What do you think?

it's done with crystal for sweet dark milds. 25% is a lot, but it will work. maybe you could start with 15% or something and see what you think. if it's good, go for 25!

25% is a lot. How much citra? Maybe with extra IBUs it will balance out or does that defeat the point?

shed loads of citra! Ive decided to go with about 12% but loads of Vienna instead.

3500g maris otter
3500g Vienna
1000g carared

Braver man than me, but I guess if we never try these things, we will never know ;)

Worst case scenario, your next beer could just have a plain dry malt bill (100% pale and mash at 65-66) - half a pint of each in the glass will make that a low percentage of both crystal and citra. sorted!
