Thats great, thanks, most of my questions were answered there.

One main difference ive thought about, apart from one fermenting in a 25L tub with 2L air space and the other fermenting in a 25L tub with 11L air space, is that i used safale s-04 on the big one and champagne yeast on the smaller one. But same amount of yeast even though little one was half the size!

Whoops. Could be why it fermented out in a week?

Anyways, going to check them 1st weekend of dec, hope they will be ok in the shed? Or should i bring them indoors?

depends - do you need the FV for your next batch?
is the wife wanting the space?
Do you really want to drink some right now? / for a party this weekend?
Are you impatient?
Are you woried that 'something' might happen to if if you don't?
do you just want something to do?

If you answered 'yes' to any of these, then get bottling.

Otherwise, it's fine to leave alone for weeks more (if not months, even years if you forget about it, and it's sealed well)

general accepted practice is that it gets better if left maturing in bulk for longer, but not all of us have this luxury, so rack, prime, and bottle, whenever you're ready, or forced to.

I have it in the shed, airlock fitted, blinkin cold out there.

Will just leave it there if its ok, didnt know if there was any advantage to bottling now, dont want it getting spoiled or wasted.

Thanks for the reassurances.

Bit the bullet and bottled. I had an IPA that needed bottling so decided to do this one too so i could sterilise all the kit once.

Very happy with the colour, its still quite sharp and dry, but it was drinkable so hope it can only get better!
