100% co2 or 70/30 nitro? I use 100% co2 in my kegerator, but I'm noticing as my beers reach their desired carbonation they get more bitter. I don't mind it too much, it's a little bit harsh at first, but mainly the wife and some friends notice it more. I've read that co2 can do this somehow (can't remember how) and I'm wondering if I should get pub mix when I refill, would this help reduce this effect? Any experience / advice gladly welcomed.

Carbon dioxide dissolved in water will make carbonic acid which is what gives sparkling water its distinct taste.
You might also taste it in your mouth if you encounter a CO2 leak.
 
I dont think you can refill mixed gas in a co2 bottle and a mixed gas bottle uses a different reg I think the co2 is male on the bottle and mixed is female or at least mine is
