    festival - london porter

Hi, on day 7 today, just took a reading of 1.020 so I'm 11 of the supposed target, any ideas how fast I should expect it to hit its finish gravity or is that a piece of string question. I would be the same as you I feel, I'm not sure I want it really bitter, its quite smooth and silky at the...

    festival - london porter

I have started a London porter festival kit, have to admit its been different to the previous kits I have done, I have been surprised how little activity it has had, temperature has been a steady 22 - 23 degrees which apparently is about right according to the instructions, I did add an extra...

    beginner with spraymalt

Hi, couple of novice questions 1. Why use spraymalt instead of sugar. 2. Why use spraymalt in addition to the 1kg of sugar 3. Is the abv the same if you use weight for weight as a replacement for sugar 4. Is the main difference between dark and light the taste. And last if you add 500g of...

    raisin wine

Hi guys, I had a go at the raisin wine recipe in the recipe section of the forum, I'm wondering if I mucked it up by not putting in either enough raisins in or any sugar, I miss read the quantity of raisins as 3.5lbs not kg and I haven't put in any sugar, I added the yeast on Wednesday and all...

    Raisin wine

I've just had a go at this, just wondered, would you expect it to be doing much after 24 hours from adding the yeast. I lifted the lid tonight to give its daily stir and the raisin had all floated to the top, I didn't know if I should break it up or not, but the recipe says stir daily. Once...

    recipe adjustment - prune wine

Would lemon juice be a substitute for citric acid, this book uses that a lot, what is the reason for adding citric acid to wines?. Is there a good yeast you'd recommend for this, I was just going to use a youngs general red wine but I'm not too sure. Thank you for the help by the way and sorry...

Hi I have a recipe for prune wine in an old book, what adjustments would you do? Recipe as follows: Wash prunes, put in bowl with enough water to cover and allow for swelling. Leave for 12 hours, tip in to saucepan and add water to make up to a gallon. Cut raisin in to small pieces, add to...

    clearing beer

Thanks guys. I suspect the last one was bottle too soon, how long do you normally leave between end of fermentation and siphoning? I think mine was about 4 days or something. Do finnings affect the taste is that why you don't use them, I must admit I was amazed how clear the wine went.

    clearing beer

I'm about to embark on my 5th brew but only my second beer, I was wondering if it is worth buying beer finnings to help clear the sediment this time. All the beer I bottled last time did have sediment in the bottom of each bottle, and it is very difficult to pour without getting sediments in the...

    Supermarket bargain fruit experiment

Ah I see. This sounds quite good fun, I'm quite jealous. How did you arrive at 2 gallons for that amount of fruit, is it just experience? Also what sort of time line are you working on before bottling and then maturing time before drinking. Sorry again about the questions. Cheers Tom.
