    The chiller coil is handy. I managed to score a Maxi110 for £70 (thermostat gone). Installed a STC1000 instead and connected a SSR to control the faucet pump to circulate chilled water through the coil. So much for a poor man's glycol chiller (I only need to control one fermenter anyways)...

    Not sure I fully understand. The only type of alcohol that humans can safely drink is ethanol. Or did you mean methanol? PS: I think it is advantageous to have a conical fermenter for dumping debris and yeast harvest. Flame away (anything to steer this off the plastic thread). ;P

    You might run into issues at higher temperatures or once the lining is damaged. See the sources above. Up to you though. It's worth taking note esp when deciding between plastic buckets and stainless steel -- which is the context of this ask. I'd go for stainless.

    Plastics can leak petrochemicals into food. You need to talk to a lab to conduct the right experiment and measure the (miniscule) amounts. I'd stay away from them -- just in case. UV protection was already mentioned. More importantly: shiny always wins :D

    Water for a Munich Helles

    Often, Polyvinylpolypyrrolidone (PVPP) is used. Bavarian regularions permit this filter aid since it can be completely removed by filtration. It is also widely used here in the UK. Murphy's or The Malt Miller sell it.
