    After re-reading a book on smoked beers and the history of them, it got me thinking I want to brew a historical porter and age it untill the depths of winter, might even look at brewing just before I go overseas for 3 weeks to give it a long fermentation period and a bit of conditioning...

    Thats a fair call, but instead of denouncing the American Styles they do have, why not just try and push for more english styles?? I mean, I can tell the difference between the 4 above styles in a big way, and in saying that, I would love for there to be more diversity in the english styles!!

    See I disagree there completely... There are 3 different styles of IPA according the the BJCP style guidelines, as well as APA English IPA - More malt balanced, more simple grist and use of english hops, generally not as bitter as the American versions.. American IPA - Still fairly balanced...

    black choc and carapils you say?? Interesting combo... I think at the end of the day tho, 200gms of Sauvin at 15 mins is going to completely dominate :lol: its definately going to be hoppy :thumb:

    So can I ask why you would age it for so long??? Did you or are you going to dry hop it?

    Brewed in Jan?? As in January 09 for this xmas coming??? Wow, thats a long time to age an IPA, the US ones I brew im normally drinking them 3 weeks after dry hopping, and theyre gone 1-2 weeks after that :drink: All of that lovely aroma disappears pretty quickly :cry:

    Thought so, even tho its technically not english, it still works bloody well ;) Have I got enough flavour and dry hops in there?? I feel like its not enough but know I shouldnt go too overboard like I do with USIPAs

    Correct my friend!! Only small amounts of Amarillo to add a bit of mandarin marmalade character which IMO works well with english beers... Also in regards to the yeast, i quite often use US-05 in IPA's because it makes the hops and malt really stand out! But as I said, im open to any other...

    Bacon in beer?

    Was reading this today http://www.nzherald.co.nz/lifestyle/new ... d=10594952 And it got me thinking :wha: Could this somehow work in a beer? Like with maple syrup? Yum!! The thing that worries me is the oil and fat which I guess will somehow ruin the beer?? Any thoughts?

    Dry Hopping kit advice required...

    In an IPA personally I wouldnt use any less than 50gms!! Generally about 50% of my hop bill is in the dry hop in my IPAs

    Havnt used magnum so cant really comment, but id be putting all of the dry hops in for 10 days if it was me, get the most out of them :thumb: And id probably throw some Amarillo in at 10 or 20 as well to get some of the flavour through!!
