    I brewed a belgian witbier on Sunday and after an initial vigorous fermentation it has almost come to a halt. It had an SG of 1048 and I just took one at 1010 which was my target for a 5% beer.     Update on my mash tun. I tested first with nothing on the bottom, with 5 litres water at 75 degrees. Within half an hour it had dropped to 50 dgeress. Fail.     Do you mean insulation? If so, no, I thought the old addage heat rises would mean I wouldn't need to. I have spare foil and bubblewrap but don't want to make it unstable with 5 gallons of hot wort in it.

    I think I'm about 4 litres out. I'd rather it was as close to what it should be as possible as I bought the kit because I love the beer you can buy. So, if I racked into another FV added more water and my priming sugar, gave a gentle stir and then bottled, this would be fine.
