    When i did my first wine kit i filtered all the water, but the local home brew shop said it wasn't necessary but i prefer to just to be on the safe side.

    Well so much for a seven day wine kit. Seven days and the activity in the air lock had stopped, another seven days for it to clear completely and now trying to disolve 500g of sugar into the liquid, still hoping for a decent tasting wine.

    Yes I think it had stopped, there had been no bubbles for a few days now, I thought potassium metabisulphate was the fermentation stopper?
