When i did my first wine kit i filtered all the water, but the local home brew shop said it wasn't necessary but i prefer to just to be on the safe side.

Well so much for a seven day wine kit. Seven days and the activity in the air lock had stopped, another seven days for it to clear completely and now trying to disolve 500g of sugar into the liquid, still hoping for a decent tasting wine.

After a couple of California Connoisseur kits (Merlot and Barolla) which I am impressed with, I picked up a Solomon Grundy Apricot wine kit reduced to £6 in the local brew shop. Allegedly, this wine will be ready in 7 days....

Yes I think it had stopped, there had been no bubbles for a few days now, I thought potassium metabisulphate was the fermentation stopper?

I wonder if anyone can advise me please. I'm currently fermenting a California Connoiseur Cabernet Merlot 1 gallon kit. The problem is I forgot to add the sachet of Potassium Metabisulphate but put in a sachet of potassium sorbate in by mistake. Is the process ruined now or can it be...
