    So it is hard to say what could be the optimal temperature profile. If it was me, I would not use the heating and let it ferment at 18-19C. I believe high temperature has a greater (negative) impact with respect to low temp. Just my personal opinion, anyhow

    Do you have any information regarding which yeast was in the kit? 18-19 degrees is a good temperature for most of ale yeast types

    I think the bottles will be ok. Just to be on the safe side, you may keep all your bottles in a plastic bag while they finish carbonating / maturing. So that if one bottle explodes, it will be much easier to clean up everything

    Fermentation Chamber Build - Heat Source and Holes?

    I agree with that, I drilled no additional holes. The second hand fridge I bought had a hole in the back for connecting the hydraulic circuit inside the fridge to the motor in the back. I was easily able to fit temperature probe and heater cable in that hole. As an heater, I use an wrap belt.

    Jumping on this thread... I made my first brew with Lallemand Belle Saison yeast. It finished fermenting couple of days ago, at the moment it is ok, but super hazy.
