    The mash temperature was not okay IMO. 77 degrees is almost a 'mash out' temperature and I would say at this high an initial temperature there is a great chance that a lot of the amylase has been denatured. A good stir is also needed, but I think the main problem was the strike temperature. ATB

    What temperature is the brew at? It sounds like like it has stopped fermenting.....could be due to the cold or you could have a stuck fermentation. Make sure the FV is around 20 degress and use a sanitised paddle or spoon to rouse the yeast back in to suspension. Hopefully this will get it...

    There is a rubber seal within the post....sometimes they are not seated correctly or worn/torn. They are fairly easy to strip down.

    Have you spoken to Wyeast about your problems? Maybe there has been some problem there with particular batches??.....they will be able to tell you this very quickly using the batch codes. FWIW, I've not encountered any problems with the two that I've used......one of which was 2-3 months out of...
