    Terry Foster Porter Recipe

I don't know why I just walked towards this without thinking until it was pointed out - I nearly made not one but two of theses with Chevalier and MO malts - what a waste that would have been! I have spent loads of time reading about Malts and beers from the Victorian era but it didn't ring any...

    What did you brew today?

I brewed a hybrid with grain I wanted out of the way to be able to store the influx of grain for the next three porters. So it was: 3.8kg Pilsner 500g Wheat 400g Flake Maize Hops: 20g Cashmere at 60, 15g each of Cashmere and Cascade at 10 mins and another 20g of each at Hopstand (75c for...

    Terry Foster Porter Recipe

Thanks - however, for the purposes of the experiment I am doing (testing Chevalier v Maris Otter) I think the time to do the creation of Brown malt (rather than use the bought stuff I have) will not be worth the outcomes required if that makes sense. I still have the creation of Invert Sugar on...

    Terry Foster Porter Recipe

Interesting as I intended to do that 1822 porter but now that you mention it there is very little base malt and lots of highly kilned malt...um...maybe a rethink... I suspect that it may have worked when Brown malt had diastatic power.

    The Encircling Hop

This is a great read https://www.amazon.co.uk/Encircling-Hop-History-Hops-Brewing/dp/1872489036 Wife bought it for me for my birthday and as I grow hops as well as brew I was interested in the history of hops growing and drying etc. Really good read centering on one farm in Kent from the 1700s...

    Woodfordes Wherry Review

I tried Blackrock many years ago before I started all grain and found them quite strange tasting, Which one would you consider doing? You won't go wrong with the Wherry.

    How often do you brew?

This is the one for 1944 which is low hopped and low A/C - the other one I have is from 1862 and is called an Export but is hopped up to around 120IBU so I will post that too if you want. Both come from Ron Pattison's website shutupaboutbarclayperkins. Let's Brew Wednesday - 1944 William...

    How often do you brew?

I brew once a week - hot weather has been an issue - lost three beers to over carbonation due to being in a garage which got to over 30c. Now leaving my crates in a north facing room which is 10 degrees lower than the outside and garage so back in business. Next brews are a 1944 recipe for a...

    Vintage Beers

I guess I am going to find out if I like the strong tastes! My only issue is that I store my beers in a garage and when the temp goes up like it did the other week I can sit back and listen to bottles exploding! Our house apparently has a concrete bunker buried somewhere under the patio and I...
