    Not heard of it but love the name - assume the thought is that it makes you salivate? :) Moorhouses White Witch for me this evening - 2 in the pub and few more in bottles at home. Noticeable difference between tap and bottles but both very agreeable :thumb:

    I've had some beers with not much head before - I've currently got a beer fermenting so want make sure I get the carbonation and conditioning processes right. 2 weeks for each step? What are the ideal temperatures please?

    How sterile is our equipment?

    I often leave things soaking in the steriliser for quite a bit longer than it says to (occasionally overnight for example) - could this be harming anything?

    Sediment / Clearing Issue

    Sounds a treat! I wanted to brew a lighter ale for Christmas too but have gone with just two hops with spicy and woody notes together with pale/golden promise malts. I find a lot of winter / Xmas ales are darker but it's nice to find a lighter one in the mix at this time of year. Fingers...
