    Going off at a bit of a tangent, Aldi do "Clear Spring" water at 14p for 2 litres, so 25 litres would cost 185p rather than over five quid for Ashbeck.

    Can you wait a month or so until the elderberries come out? Elderberries and blackberries in wine go together deliciously. I use 500g elder, 1.5 to 2Kg blackberry a gallon, they add tannin and depth to the wine.

    Are you doing no chill because you dont think it makes a difference, or because you dont have a cooling coil or chill plate? I used to lug a five gallon cube of wort up the stairs and splash it in a full bath of cold water for 30 minutes to cool it.
