    I’m about to brew an English IPA from a recipe that recommends US-05 dry yeast. I have used US-05 for American IPA’s with success, but would an S-04 dry yeast be better for an English IPA?

    I recently read, "A typical liquid yeast contains enough live cells to ferment just 18 litres so it is best to use a yeast starter". I brew just 11.5 litres at a time. Does that mean I don't need to use a yeast starter if I choose a liquid yeast over a dry yeast?

    Thank you for all these helpful comments. I am now fully assured that the extra caramalt will make little or no difference to my brew. I was unsettled because all-grain brewing takes a lot of time and I didn't want to do it all and then feel unhappy with the result.

    Thanks. Some good ideas have been given on this thread, but I think this will work for my 11L pot. I'll be trying it out with my next brew.

    I am thinking of using a cube to cool my wort. Can anyone let me know where I might get a good one online? Also, I only do 11.5 litre brews so would a 25 litre cube be suitable or would a smaller one be absolutely necessary? So far, I can only find 25 litre cubes online.
