    Sour pitch is really good. Sounds doable, although I'm not sure I agree that the souring makes a faster beer, and Berliner is more a summer drink for my tastes, otherwise sure why not. I used a half pack of sour pitch on a kettle sour wit base blueberry thing and it was well soured in 18hrs at 37.

    Honestly I wouldn't even bother unless you can do closed transfers to purged kegs. If not then my advice is to add no wheat and very not too much flaked anything, a little flaked barley or oats seems ok. 10 percent or so. The consensus on cacl gypsum ratios isn't all that clear.     Hmm, im afraid the barley wine isnt share worthy (except to drunk houseguests at bedtime). It's based off a wild capture, but something has turned to the dark side. Interesting, but not in a great way... The sour cherry (no actual fruit) Brett type thing is quite interesting in a good way...

    You can't take an og anymore that so has sailed. As I said it looks like your og was about right, but then you aread sugar which will have taken it up by 11 points. The sugar won't affect the fg much as it's so fermentable. Your beer will likely be about 1.5 percent abv stronger than you expected

    Did you correct for temperature of the wort when you read it? or cool it? if not a 65c wort at .030 corrected is about .046 which assuming 10ltr boiled down to 7 gives a new og of 1.066, which is pretty close. however adding that sugar will give about 11 points, so 1.077.
