Covid the *** and the final stage.

I'm 49 but got offered a vaccine last week (when I was still 48) so went for it. Was on the shielding list so maybe that's why. My OH is 7 years older and with the same doctor and he hasn't had an offer yet. AZ. Felt terrible for approx 24 hours after, temperature, headache, sore arm, and the...

    Yeast slurry storage/reuse advice

I pitched a lager onto a small amount (200mls, screwed up, thought I had more) of old slurry on Monday and it took until yesterday to kick off. I was panicking so upped the temperature to 15C and that seemed to do the trick. It's going mental now. Not sure whether to go back down to 12 or just...

    So who's growing chillies 2020?

Yeah I would cut back fairly aggressively but leaving a few leaves so that it can still grow/photosynthesise. Often I've had to cut back again during the winter as they kept growing so well in my bathroom!

    So who's growing chillies 2020?

Not sure if this has been mentioned, but chili plants keep really well through the winter if you have space. They start to die at 12 degrees C or below, but if you can keep them above that they are a perennial. Gives you a massive headstart next year if you can keep them. I generally cut them...

    Pickling chillies

My only issue with that Jamie recipe is that the vinegar isn't diluted so it could well end up being far too sharp. Generally a 50.50 mix of water and vinegar is plenty strong enough. I don't boil when I pickle in the vac packer and there's no spoilage as long as everything is covered with the...

    Pickling chillies

I also do a lot of pickling with the vacuum packer. I guess lots of people have them these days. Super fast pickles!

    Pickling chillies

I reckon you could use a bit of calcium chloride to keep them crisp. Luckily a thing which most of us would have kicking around.

    Pickling chillies

I'm a big fan of Mexican style pickled chillies with veg, like this one: Taqueria Style Pickled Jalapenos and Carrots | Mexican Please My hint would be, don't use a metal lid because it will eat through it!

Solid crust of yeast in fermenter

I did make a starter from it, but even that was done in less than 24 hours. That stuff is a beast! I haven't tried the beer properly yet, it's conditioning in the cornie. The taste I had when kegging it had a distinct banana-y flavour but I'm hoping that will condition out. And yes, it did seem...
