Still need your bittering hops but then with the elder flowers throw a decent bunch of them in at flameout. I'm kegging a kwiek elderflower pale ale this evening but have done a saison in the past and it worked really well.
I’m that case I know what your missing. Their boil is done in old school coppers and it’s a hard boil so contributes some extra complexity.
Not for much longer though, the owners are shutting it down as not economically viable.

We’ve celebrated by getting a week away in Ireland using only 3 days leave. Just discovered as well that theres a brewery with tap room near one of the campsites we are staying at.
