    Sour help.

    I use the dregs of boon oude gueze from two bottles and a bit of clear strained greek yogurt juice with lacto. keep nice and warm 30c+ no yeast required. It will be uber sour when young but will mellow over time.

    Wednesdays beers in Edinburgh..... The brewdog clear beer was solo Simcoe and a bit disappointing the jackhammer however was great. As for vault city only the elderflower and pear was below their usual standard (or too subtle for me).

    Bottling a Quad - should I have added yeast?

    I've never added yeast at bottling as long as there is some 'sugar' left in the beer that they yeast will chew on and the yeast isn't at its alcohol tolerance limit it will be fine. I've had 12%+ from a single packet of dried yeast.
