    Beer you just don't like/can't drink

    Castle by South African breweries, it tastes of chemicals......yuck. But, it did get me in to brewing. After being in SA for a year I found a coopers kit in a store, and wow, beer you could actually drink, share and enjoy. So yes I hate castle beer, but in a way I'm really grateful for it ;)

    Torrified Wheat Replacement

    This is good to know, I almost went with flaked oats, but wasn't sure if it would give similar results to Torrified wheat. Well my brew is in the FV and it looks, smells and taste good so far. I'll only really know the true results once it has been conditioned in the bottle.

    quick fermentation question. .

    Thanks very much for the replies. The cellar at the time of brewing was a bit colder, which I thought may be too cold for that yeast, otherwise it would have gone straight there. I will bottle it in about a weeks time as I will be away, and then put it down in the cellar for conditioning.

    Hop Spider or Hop Bags

    I use homemade mesh bags and let them move around freely which works well. If I have a large amount of hops to add at one time, this allows me to split them between several bags so I get the maximum water circulation.

    That is my understanding as well. My brew tasted good, but it didn't have that nice rounded flavour of the Fourtyniner, but I don't know if the absence of TW is the reason or if it was something else. I'll give it another go and follow your recipe without the TW and see how it turns out...
