    Does any of you add the dark and crystal malts later in the mash. I am doing a choc coconut stout with only 66% base malt and thought i may try adding them after an hour or does it even matter? Thinking these lager kveik strains could be good for stouts.

    If its any help i have tasted starters built up from tiny amounts of dried yeast and it tasted a bit cack. Decanted and fed it again and subsequent beers have been great. Always make a starter to evaluate yeast health.

    I wonder why people are getting mold. My fridges have no problems although i had a chair in the garage go moldy. Possibly from accidentally closing the door while brewing. Vinegar in a spray bottle can remove contamination and the smell.

    I have a tank on my system as we use it for drinking as well. The waste is plumbed into the ubend under the sink and only produces a trickle.

    Could the almonds be yeast in suspension? Had a sample of a brett beer halfway through and it was unpleasant. I never normally sample anything until its fermented so rather short on advice.

    Great read Peebee. Interesting you had less efficiency with the RedX. I have not noticed it but always mash for ages. I just bought some more to do another red lager. I found the cara red did not add enough colour so i will be trying red crystal next. Beer looks lovely!

    SMASH for hop self education

    You could try hopping at 15m, 5m and flameout. Adjust the IBU's accordingly. Its called hop bursting if you want to look it up. Citra SMASH is a great beer.
