60 minute mash Vs 20 minute mash

For commercial breweries, efficiency is a big deal. For us, the difference might be a couple of handfuls of grain but for them it could be several sacks worth. If you are running a business that matters. The other issue that no one has mentioned is conversion of starch to sugars. It not...

    Ordering grain & supplies online?

I just double checked my last order from HBC. They sent it in two packages after I topped up the order to £140 (twice free postage limit). I had one 25KG sack of grain, which was just sent with a postage label and some parcel tape around it. The rest of the order came to 30.8KG so was right at...

    Ordering grain & supplies online?

I recently ordered a lot of grain from HBC it was well over 31KG or two boxes so they said they would need to charge. As I was only £15 from double the cost of their free shipping, I asked if I could chuck in some extra hops to bring the total up and have them send it for free. They were happy...

    Water shortage brewing.

Stirring or otherwise agitating the wort as it cools is a good way to speed up chilling with an immersion chiller. It keeps hot wort constantly in contact with the chiller and avoids a cool insulating layer of wort building up around the coils. The other possibility if you have a temperature...

    Critique my NIPA recipe idea

As Joel says this is a good start. I concur with him that the lactose and orange juice are unnecessary. I wouldn't use Nottingham for the yeast either. S04 should work well. Also Danstar now doe a New England yeast, so that would be a good bet. Personally, I would alter the hop additions...

Batch Priming Sugar Solution Time Lag

The yeast will get working on that sugar pretty quickly. You will probably need to reprime

How long to leave elderflower champagne on fruit

I've made an elderflower champagne recent. I bottled half the batch earlier this week but I kept 4L aside and added it to 1Kg of raspberries which I had gentle stewed for a few minutes to release the juice and kill off any nasties. It's taken a couple of days for fermentation to kick off again...

    First beer down the drain

I'm just not a big fan of lagers. I though I should have a go at one but after drinking a bit of it, I wanted something with a bit more flavour. I though that the dry hops would basically turn it into a pale ale. Unfortunately they ruined it.

    First beer down the drain

I'm sure Rakua hops can be fine but if they have ruined this beer when they appear to have been packaged correctly and have been freezer stored since purchase then they must be a variety that is easily susceptible to oxidation. There are so many great hops out there that unless someone presents...

    Small batch Lemon Saison

It's very rare that I drink a beer and think that I want to exactly clone it but this was one of them.

    Small batch Lemon Saison

My recipe that I linked to is for 30L into the fermentor. I think the original one that I based it on would have been about 23L. They put 4 oranges, 2 lemons and 2 limes in secondary. For 30L I was thinking of upping that to 5 or 6 oranges and an extra lemon or lime.

    Small batch Lemon Saison

I had a three fruit marmalade saison recently and I'm planning on replicating it. The brewer said they added the juice and whole rinds of 4 oranges, 2 lemons and 2 limes to secondary for a day or two. It was amazing and had a great citrusy/marmalade taste. My recipe is here...

    First beer down the drain

I saw on the milk the funk page that only some Brett can do this. Do you know of a strain that will definitely do this?

    First beer down the drain

I've been brewing for 2 1/2 years and so far have always made beers that I've enjoyed. Unfortunately, I've finally ended up with a beer that will be going down the drain. What's even more galling is that it was a perfectly fine lager until I tried to jazz it up with some extra dry hops. The...

Best place to get curved heating elements

Brew Builder do a circular element but I guess it might be a bit small for a 250L drum. How large are your batches going to be in your 250L drum? Using 3KW elements on a 13A fuse is going to take a long time to heat hundreds of litres of water, even if you have a couple of them. Might you be...

Max period in the fermentation vessel

I left a beer in the fermentor for 3 months at the end of last year. It was sat on 150g of dry hops for all but one week of that time. I had it sat at 5°C so it was almost an extended lagering period (although it was meant to be a session IPA). It wasn't the greatest beer ever and the hop...

    Beavertown sells to Heineken

I think the point is that many people won't want there money going to Heineken even if Beavertown get to retain control. Also that Heineken will use it's power to squeeze small producers out of the national distribution networks. "Plant has also indicated that, if requested, Heineken would...

    Beavertown sells to Heineken

Sad news. It's not necessarily that Beavertown will be forced to cut costs and produce ***** beer, that's not why big macro brewers buy into them. The point is that Heineken want's a slice of the craft beer market because it is growing strongly and Beavertown are probably a good investment...

A few questions for people who now sell their own beer at craft fairs etc.

You also need a commercial waste disposal contract as part of the environmental health registration, even if you are chucking all of your grains onto a compost heap.
