    "Left-overs" Mixed Fruit Wine

Finally bottled this batch. The colour is now a delicate rose. Only had one clear glass bottle so the remainder is in plastic bottles. Now all bottled from 2022. Let's see what fruit and juice I can gather in 2023.

Small Batch (Kitchen Brewing) - Coriander Saison

Just bottled this second batch (no coriander this time) - 9 bottles this time. Opening the FV I was surprised by a nice fruity aroma. A taste test confirmed, it's fruity, nicely hoppy and malty. Should be very nice once carbonated. It's still too dark for a traditional saison, I did use amber...

Small Batch (Kitchen Brewing) - Coriander Saison

There's an explanation as to the quantities: 200ml is about 100g - suspect the author used a measuring jug for liquids .... As to the volume, I'm sure I put in too little water in the first place, with a half hour boil there can't be a boil loss of 1.5 litres .... so I made sure there's five...

    First time brewer

Yes - this video about Lindemans Brewery gives some insight: The variability is part of the product - I'm sure there are loads of members/posts on the forum about this.

    First time brewer

In the (very) old days, before plastic gear and the Internet, some home brew instructions advised to put a cloth/tea towel over the fermentation vessel. So no explosions there. And the beer was consumed....There are commercial breweries around (especially in Belgium) who brew in uncovered...

    First time brewer

Even if you snapped the lid in place it's still not airtight and unlikely to blow off, CO2 will escape. Was the bucket sold as suitable for brewing? I would normally have a hole in the lid for fitting an airlock.

    Bottle conditioning sediment

Can't remember a bad belly after homebrew beer, only hangovers if I had too much - when I was younger.... these days I limit myself to two bottles a week (except for Christmas).

    Bottle conditioning sediment

Well I drink the lot ... don't mind the sediment! I notice there's now "cloudy" IPA for sale in shops, and pricey at that. And if I serve to someone cloudy homebrew beer or wine I call it "naturally cloudy" which is generally well received. As consumers we are used to 100% crystal clears beers -...

Small Batch (Kitchen Brewing) - Coriander Saison

As mentioned above Friday morning I started the same brew basically to see how it turns out without coriander and to use up the remaining malt and hops. To recap here's the recipe, same procedure - 5 litres: - 100g crushed wheat malt - 100g crushed amber malt - 500g spray malt - 50g Citra hops -...

    IPA brewing temperature

How about just wrapping FV with a sweater or two, or some insulation material? The fermentation itself creates heat, that way you'll keep it in. When we had the heatwave I had both beers and wine going at around 24C and turned out ok.

Small Batch (Kitchen Brewing) - Coriander Saison

The Coriander Saison has been in the bottle for over a week. Today I opened a small (quarter pint?) bottle for a quick QC. There was quite a bit of sludge in the bottle as it was the drags from the bottom of the FV, so not clear when pouring. A bit darker than I expected. I must say I'm...

Small Batch (Kitchen Brewing) - Coriander Saison

I have now bottled this brew, in the end it turned out to be just four litres, didn't compensate for boil-off.... Having tasted a sample it seems the coriander is over-powering the Citra aroma, probably put in too much coriander. Maybe once carbonated the herb aroma won't be as strong? Anyway, I...

Did I just ruin my beer

Reminds me of an episode of the Hairy Bikers visiting a brewery in Belgium(?), taking a sample from an huge open FV, tasting it then chucking back the remainder. Loads of comments on that, they could have spoiled the brew, etc. Beer yeast is a tough cookie, you really need to go wrong big time...

Prince Harry and Meghan Markle documentary flop.

Can Clarkson explain why he would write his tripe in the first place??? Or is this just his fantasies he has in the night and then just writes them down, and gets paid publishing them? This is the same disgusting level as people threatening to kill Meghan Markle, egged on by the so-called...

Small Batch (Kitchen Brewing) - Coriander Saison

Yes I have read about seeds being used. Though didn't brewers in the middle ages use herb leaves, before hops were introduced for brewing?

Small Batch (Kitchen Brewing) - Coriander Saison

The brew has been in the FV 10 days now, per recipe I added "half a bunch" of coriander, washed and chopped. First time I ever added kitchen herbs to a brew ... The quantity stated was vague so I used half a small bag of fresh coriander, bought at Aldi. Another four days and I'll bottle (and...

    Flip Top Bottles

Amazing, where did they sell that one? Around the mid-90s I was returning from Germany by car and picked up a crate of 20 bottles on the way back (in Hamburg?), can't remember the price. But I still got most of the bottles which I have been re-filling ever since. Just remembered in 2019 we were...
