    I've got a mosaic IPA in the fermenter with 1 packet of CML Kveik Voss, yesterday after only 1 hour there was airlock activity and tonight after around 24 hours it's gone from 1.053 to 1.016 and it is still going vigorously. I plan to use finings though, but this stuff is amazing

    Yes, it is Wyeast 1469 Whilst you have no accurate way of controlling fermentation temps, have a look at Kveik yeast, it is supposed to be very forgiving of temperature fluctuations, CrossMyLoof sell it on eBay.

    Have you thought about a tall fridge? I've managed to get 3 cornies and the gas bottle in mine, also you could make a saving by not using temp control (eg inkbird) I turn mine to a low ish stat setting and it keeps it nicely at around 10 C
