Using enough yeast should prevent stalling and ensure full attenuation. Also important to aerate well.

For a high gravity beer i would triple or quadruple the normal amount of yeast and use beer nutrient.

Not a good idea. I would use at least a 20l or try fermenting it cold with lager yeast. Probably still go off though.

About 12 to 18 hours. I serve mine at 20 psi. Also Mine are half full so they will carb up quicker.

I set mine at 50PSI overnight with the gas turned off. Thats for a lager.
