    Sour help.

Just a note on Philly Sour, the Nic's Lazy Sour on TMM website is my recipe. My understanding is that Philly sour works best when there are simple sugars present, and sugar is quite a high proportion of those the Polish syrups, that's why using them produces a lot of sourness. If I was using...

    RAPT Thermometer on AliExpress

It depends on whether its sent DDP (Delivered Duty Paid) or DAP (Delivered at place), with the former the sender is paying the duty, and that will be built into the costs you pay them where as with DAP there will be VAT, possibly import duty and the carriers' handling fee for admin which...

    Ridiculous beer descriptions

Personally I'm not fond of the terms Black IPA and White Stout, but I understand its simply a naming system to indicate the style of beer, so that the consumer know what kind of beer it is. If we were going to insist on literal descriptions for beers how on earth would you go about marketing...

    Ridiculous beer descriptions

There's an old joke, If the answer is "2 fat blokes and a hooker" what's the question? . . . How would you describe a rugby front row?

    Thames water potential collapse

They've been going down the drain for years! (I'll get my coat) In order for the companies involved to be motivated to provide the best value, I feel that privatised infrastructure needs consumer driven competition. We do see this in internet providers and electricity suppliers (in normal...

    Missing Sub

It doesn't seem like their odds are good, I can't imagine what's going through their mind right now, assuming they are still alive. The sub seems a bit shoddy Alas we treat many such placed as tourist attractions, there are plenty of battle field tours.

    Rice Hulls

I've never heard of anyone trying it, it would be interesting to know how it performs. However since rice hulls and oat husks, which perform the same purpose, are easily available I don't think I'd want to risk a brew finding out.

    APA

Well I've a soft spot for Liberty bell, IMO it gives a lovely balance between malt and hops, so that would be my choice. IIRC Empire is a low attenuator which usually means it's not so fond of long chain sugars so, if I was using that on I might mash a couple of degrees lower, years since I've...

    Sterilising spoons

Spray bottle, with a no rinse sanitiser, for me too. Not just spoons but scissors, the outside of yeast packets, trial jar in case anything drips back into the wort, I even spray my hands.

Grainfather , malt miller shout out

No as part of the customs declaration we provide our IOSS number, which puts it into the scheme and the shipment is sent as “Deliver Duty Paid”, which means that the shipper is paying the related costs. We pay the VAT in a monthly return and there is a small handling fee which we cover but as...

Grainfather , malt miller shout out

If you're a private individual and order less than 150€ of goods the order now goes with the EU's IOSS scheme (which they didn't have ready until at least 6 months after Brexit, but it means that VAT is collected at the point of purchase and there are no courier handling or import duties to pay...

Water when using liquid malt extract

Personally I wouldn't use distilled or RO water, when using extract, the 5.2-5.6 pH really is just the sweet spot for the enzymes in the mash when converting the starches into sugars and that is all done for you. Trace elements in tap water may well aid yeast health during fermentation and...

    Postal strike

The strikes have forced a lot of businesses to move to different couriers, as is evident by the strain the other couriers are under, carrying a lot more parcels than they had planned for, as peak planning is typically done late Summer. It's unlikely that these businesses will return to Royal...

    Brewing in hot weather

Lallemend Kveik Yeast is happy at higher temperatures, just be aware though that fermentation is exothermic so if you set your fermentation chamber high 30's its going to go off like a rocket, producing heat and can easily overshoot the target range.
