    Should be enough time. An American IPA will only get worse after 3 weeks in the bottle. Prioritise proper fermentation completion including a diacetyl rest over bottle conditioning time. Kveik obviously will be the fastest, but US-05 will easily be done within the week. Avoid M44 if you can...

    Munich is perfectly interchangeable with base malt, should add a bit of body/colour without sweetness. Up to you whether you wanted to substitute some MO, or just have 10% more ABV.

    The deadspace is a massive 7l btw, just measured. Kinda makes it hard to do smaller mashes, and limits efficiency as not much sparge water.

    Yes. The process is different in the DI water uses ion exchange and RO uses pressure through a membrane. DI purity is measured using conductivity of the water (it is almost a perfect insulator), RO is less pure, with 0 TDS as a target, even though Spotless get pretty close. DI is more expensive...
