    Yes. I've been thinking about the 'under-carbonation'. That's what I thought because it doesn't fizz like I normally make them but there is enough so it doesn't taste flat. So maybe low carbonation is more correct. Do you want to try them @matt76 ?

    Well. I’ve cocked up the carbonation. Undercarbed but I know why. They pour nearly flat but it doesn’t seem to spoil anything, makes it taste hand pulled. Had a sample of each, there is definitely a taste difference. No spoilers yet as I need to do a side by side. @Sadfield , do you want to...

    I buy my bread yeast in 500g bags and store it in the freezer. I transfer about 50g into a little jam jar which I keep in the fridge to use when I'm making bread. When the jam jar us empty I top it back up from the freezer. I store beer yeast in the freezer too. I think my record is 4 years...

    Hi Roy, I’m sure a cider expert will be along shortly. I make cider but I ‘cheat’ and use the cheapest apple juice I can find and ferment with bread yeast (which actually works really well).

    If its going to be mid Nov then I've got time to make something :D. I think the beer I had in mind is brown rather than dark.

    Thinking about making my next batch last night. As it is a combined pale malt mash and dark grain steep most of the flavour is probably coming from the dark grains, right ? So why not miss out the mash and use liquid malt extract instead ? Then its just a steep and hop tea (or hop extract).

    Amazingly they are well carbed already, one pet bottle in particular so I tried it last night. Cloudy but tastes really good. After 2 days of bottling ashock1. I put it down to using Kviek.
