    They’re different flours. Doppis Zero has lower protein content. Useful all rounder and suitable for lower hydration shorter ferments than Pizzeria. I’ve only ever made gnocchi with it.     Early finish in Dublin today. So after a run in Phoenix Park and a dip in the hotel pool, it’s time for an Irish Red. Smithwicks, for all its faults, is tasty when enjoyed outdoors in 22 degrees sunshine. Papal Cross in the Park for anyone that’s interested, improved by my post-10k leery grin.
