    Yer I thought that might be giving me incorrect numbers, however I am heating that amount of water in my HLT ( was just going to use the rest for cleanup). I'll try to run the numbers with the brew volume instead.

    Are you sure this is correct. Not saying you are wrong but I can't find any detailed breakdown of where the highland cases are. I thought they might be on Mull as one of the schools is closed. Im wondering how its getting out to the islands without being present in Oban.

    Yes. This is right. Campden can be either sodium or potassium metabisulphate, you are also right to add the sorbate. Ho2ever I think you are not supposed to add them at the same time (if this is what you have done) Some info here but it's hard to find what is the best method...

    Future advice. Make sure your on the ball with all your sanitizing. Then don't use the campden when you bottle. Just make sure you ferment it all the way out prime and bottle.
