    Your favourite hop?

Good question, and tough one to answer. At any given point I probably have 10 different hops on hand in the freezer, but the one I ALWAYS have on hand is Cascade, so I guess that's my choice. Works well at any point in the boil, and can fit in with a number of different styles. Plays well...

    Late carb and hop ajustment

Letting the bottles warm again should get the yeast going again to complete carbonation. Giving them a gentle swirl once they are warmed would also help get the settled yeast going again. Never tried dry hopping in the bottle. While I can think of many, many reasons why it would probably not...

Who can brew beer at home

Great thread. 50 years old, married, 4 kids. VP in a venture capital firm. No beard, no ink, no piercings. Fat b*stard. Got into the hobby because I want to make the type of beer I like (trad bitters) which are pretty much impossible to find in Canada. Wide range of reactions when people...

    Couple of Questions about Temperature

I also ferment in a cellar, but with somewhat larger seasonal temperature swings than your in-laws cellar (Canada). 16c should be just fine for most ale strains, as the temperature inside the fermenter will be a few degrees higher during active fermentation. I find it is also best to keep the...

Too many gadgets in the boil!

I have a robobrew, and do just what @JonBrew suggests. I use a couple of small clamps to guide the tubing from the sparge arm to the side of the robobrew, and it creates a nice whirlpool. In combination with the immersion chiller it cools the wort much quicker, as well.

    Dry hop question

Every homebrewer is different, so you sill get lots of conflicting information, I'm afraid. Just look at this thread only a few posts in! I dry hop about 4 days before packaging, as I believe it imparts a fresh hop flavour in the bottle. But you will probably be absolutely fine anywhere from...

    Advice on 2nd fining

No problem, and sorry if I was a bit harsh. As others have said, keep reading, and the knowledge will come. Also, as the chap at the homebrew store told me when I was panicking about my first batch, it is pretty rare to make a truly undrinkable batch unless you stray really far from the...

    Advice on 2nd fining

Brewing your first batch of beer can certainly be stressful, but ultimately it is a hobby, and should be fun. Appealing to "admin" because you are new, and don't like the FREE advice of other forum members? Really?

    New Styrian hop varieties

Yep. It's nice later in the boil or as a dry hop, too.

    Whirlpooling with immersion chiller

You certainly can whirlpool while the chiller is running. A whirl of the paddle inside the chiller should do the trick. Bear in mind that this will speed up the rate of chilling a bit - not a bad thing, but pertinent to my next point. Whirlpooling is usually aimed at two things - getting all...

    New Styrian hop varieties

Thanks for the info, will consider using the Wolf in a NEIPA.

    New Styrian hop varieties

I've been impressed with Aurora, as well.

    New Styrian hop varieties

Ah yes, I remember coming across that post of yours, ended up using Bobek in a nice bitter based on it.

    New Styrian hop varieties

You have more patience than I do @Cheshire Cat. I always have a taste when taking hydrometer readings, 1/4 pint at bottling, and certainly would have tried a bottle at the 2 week mark! Let us know how it turns out after conditioning.

    New Styrian hop varieties

Recently acquired 100g each of Styrian Dragon and Styrian Wolf hops. Planning a SMASH for the Styrian Dragon with Golden Promise to see what they are all about, but curious if anyone has any experience with either of these hops?

    Swing top bottles - dangerous?

Switched to swingtops exclusively after just a few months of homebrewing, mostly to speed up the bottling process. Never had a problem with them. The Hacker-Pschorr ones are great, seem to be made of thicker glass than most commercial beer bottles.

    Swing top bottle sanitising...

Just finished bottling an IPA into my swingtops and logged in to see this question. I run them through the dishwasher, bales, stoppers, and all. My dishwasher does have a sanitize setting, which gets very hot, and seems to do the job just fine. Have recently been adding a small amount of PBW...

I'm in the Toronto, Canada area. A couple of the LHBS carry Imperial now, but Wyeast and WL are certainly the most common and readily available here.

Not a review (yet) but trying Imperial Yeast A09 Pub for the first time. Supposed to be the Fullers strain. I have never seen a yeast take off so fast. The starter was showing VERY active signs of fermentation just 2 hours after pitching. After 8 hours, it looks like egg drop soup: I've...

I haven't had 1272 do that, but 1272 consistently requires a blow off tube when I use it.
