    I'm interested to see how this turns out, Wit beer is probably my all time favourite brew. Light, refreshing and full of flavour. It kicks the crap out of lager on a warm summer's day and takes nowhere near as long to make!

    How old are you?

    28 years old, started all grain at 26 and kits long before that. I figured that If I start early enough that I might be half decent by the time I retire! Put some Tesseract, Porcupine tree or Periphery on the sound system and get the HLT warming up and I'm happy.

    Thanks for the help all. I have found an identical boiler to my HLT delivered for £45 on eBay. So I have a matching setup now. I think what I'll do is keep my current boiler for the kettle and use the new one as HLT.

    I know it's tempting to throw it all in when you've got ingredients left over, but more often than not you're better off trying to make something simple. How about a nice California Common ? Makes 21 Litres at 72.5% efficiency. 5.3% Abv FG: 1.013 IBU:37 ish IBU to OG Ratio: 0.7 ish 60 mins...

    Most difficult beer style to get right?

    I would say Lager, as it takes so much time and needs adequate fermentation control or a cold house. I think it would be pretty easy though If I had a fermentation fridge for lager and one for for ale.

    Carapils is a dextrine malt, so they are approximately the same thing, if not identical.Manufacturers just name them differently. There may be some differences between maltsters but that's about it. Melanoidin is more widely used in brown and amber ales and imparts a nice biscuity honey...

    How to sweeten a Porter ?

    I wouldn't worry about FG. 10% roasted malts might make it a little harsh though but an FG of 1.015 might balance that out a little. It may well give the impression of being drier, as roasted malts can be quite drying/puckering.
