    How did you degass it? Even with a wire whip in a drill it can take a while. If it has not completely finished fermenting or it has not been stabilized its possible there are still yeast working in it adding more gas.

    I've had this too. Found out the secret is de-gassing. I usually make wine and mead by the gallon. I bought a hand operated vacuum pump and use it to de-gas. Stuff then drops crystal clear.     Under primed brew

    I bottled a stout yesterday. Half a teaspoon table sugar per 12 ounce bottle. The 740ml bottles got a full teaspoon as did the full liter bottles. Works a charm. Easy to do. Sure. Never a problem.

    I'm in the southeast US. Cool and dry doesn't happen here until maybe November. Fridge is probably the best bet. Will definitely try making it earlier next year. Thanks for the tip. I always save a pint of this year's and pack it in a jar with bourbon. I break it out Christmas eve next year...

    Maybe I'll get the pudding made this week then. How do you age it? I've been leaving it in the mold in the fridge with about a half cup of brandy poured on it.

    After pouring I rinse mine then spray about 7ml of iodophor solution in and shake it around. I'll let them sit a few days and shake them periodically. I then dump the iodophor, cover the mouth, put them away.

    Anyone else fed up with NEIPA?

    I'm just tired of IPA's. Period. The IBU war has gone beyond stupid. I read somewhere people are developing hop sensitivities, which can develop into allergies, from all the hops they've consumed. They drink yet another mega Ibu IPA and get itchy eyes, sinus problems, etc.

    I've never had Belle Saison "stick". Apparently there are some saison strains that ARE prone to sticking but not Belle Saison. Also, I've had this go below 1.000 before in less than two weeks. It's a beast.

    Made a Munich stout. Wort in the fermenter, grab the yeast and it says WB-06, not S-04. No other yeast in the house. In it went. Turned out surprisingly good.

    Wilko kit (don’t shoot me!)

    Kit I recently did I used a half kilo of sugar and a half kilo of DME. I mixed them together before adding to the fermenter. This sure kept the DME from wanting to clump up. Mix the two carefully because the DME dust will go everywhere.
