60 min vs 90 min boils

Actually, Maillard reactions take place at any temperature, but they go fastest at these temperatures. However, there is another inhibition of Maillard reactions in boiling wort: an acidic environment also slows Maillard reactions down. I found this a very informative answer.

Not as many Apples on my tree

I got 30 kg of summer apples (Summerred and James Grieve), and probably also 10 kg of Rambour d'Hiver. However, about apples being bi-annual (@buddsy , @VW911): not true. But you need to prune your apples when they start growing, remove them so that at most two apples grow on a spur. Remove...

    Declining bitter.

So, who likes a really good bitter beer then? IBU bitterness that is. Because I understand what he is going at in the article, and the Belgian beers I brew have mostly a high bitterness, and I find that pleasant. I did brew an English style bitter too (maybe a tad too strong at 6.2%), something...

    Declining bitter.

Isn't "Bitter" a designation that originated between WWI and WWII, or at least only since the end of the 19th century? When you look at all the recipes published by Ronald Pattinson, the 19th century consists of "Pale Ale" and "India Pale Ale" (of which an analysis by him definitely showed that...

    Fracking U turn

Yeah, don't pin me down on details, please. But North-Holland, Groningen and Friesland all are in the same vicinity

    Fracking U turn

And drilling gas in the north of Holland (Friesland) has positively shown that it causes mechanical damage.

    0.994 FG beer

I don't think so, but maybe they each ferment things that the other one doesn't. And how was the mash performed?

    0.994 FG beer

Hm, that is just the M31 doing its work. I got 94% from it in one beer, and 84% for the M47.

Mangrove Jack's M20 Bavarian Wheat Yeast

It should be able to ferment to 8% ABV. I brewed a Dunkelweizen of 7,5% ABV with it, without problem.

2022 Apple Harvest Cider Thread - Drought !

All big amounts! ashock1 Yesterday I obtained my first 5l cider by filtering it through a fine cloth. This is from my summer apples (got 30 kg of them, believe me, this is a record in my garden, from two half-stem (is this correct?) trees). Still got to harvest my autumn apples, although this...

    @WayneBev : this looks good.

Does dry hopping produce gas? (not hop creep)

I don't think this can be attributed to CO2 coming out of solution. The amount of CO2 dissolved is a function of temperature and external pressure, and would be in equilibrium. If temperature dropped, more CO2 would dissolve and you would get underpressure, if temperature rises, CO2 would come...

Suggestions for a nice pub around Bloomsbury?

We finally went to London. I see that this thread dates from 2018, so I suppose that the first reason we didn't go immediately was Brexit, being uncertain of how things would go. Then, the second reason was of course COVID-19. But we booked in April 2022, and where there from 1 September to 6...

    The New DeLorean Alpha5

I remember hearing of DeLorean only after the drug scandal, reading the article in Knack. That somewhere in the second half of the eighties probably. However, once, when driving from work to home (some 12-15 years ago), I drove behind a car which looked weird, because of its shiny metal finish...

    Pear juice seems thick ...

I don't think it is kraüsen in my case, but just proteins and apple cell remains which form a cake. I think I will rack it to a DJ this weekend, let it ferment out and keep it there until my next batch of apples. Because this is now from my summer apples, I have still a bunch of autumn apples to...

    Pear juice seems thick ...

Good question. I have the same with my apple "juice". I actually added 1 l sugar water (OG = 1.040) to make it a little bit more fluid. However, the fermentation has also taken off. Now I probably have the same layer of "cake" on my cider.

Women were the first brewers - and there’s pictures !

From Wikipedia: I also suppose that it's women who discovered brewing, as in hunting-gathering societies they would gather and process food stuffs, like wild cereals. However, I think that pottery would also be needed to discover brewing. Without a vessel to keep things for a longer time...

    Hard Rubbish Day!

Here, a simple trailer with only two wheels (max. load 500 kg) is considered personal, anything bigger also needs a permit, and I think there is even one day (or two half days) in the week where only people with permits are allowed. One thing that COVID-19 changed for good is the fact that...

    Hard Rubbish Day!

West-Flemish for beginners: the Big Bin = de groote vuulbak I think it was officially called "Groot huisvuil", big waste collection. We loved this as kids. Used to pick up tubes/valves from old TV sets when I got interested in electronics. I also remember when this changed, it became one day...
