You could deal with the dryness issue by putting half an inch of apple juice in the bottom of your glass and pouring your mead onto it. I've had to do this on occasion for acidic cider and it helps greatly.

A bit late now but you could have pitched your yeast easily at 26 degrees. By the time the yeast gets working it would be easily down to proper temperature.
Beaver Dale kits come out at about 10% and a bit watery. Just make them up to a smaller volume which solves all issues. I do mine at 4.5 gallons instead of 5. Best one of the Beaver dales is the Nebiolo, the Mrs loves it and it's better than most £6 supermarket wines.
