    Blackberry and sloe wine recipe

Ripeness of sloes seems to vary a lot. Where I live there's not a slow left by the end of September. Basically give them a squeeze. If they're soft and the proper colour then they're ripe. To get the flavour out freeze them after picking. Basic recipe I use is 4 lb fruit to be made up to a...

    Increasing ABV with sugar addition?

I often add half a pound of granulated to my brews. Doesn't have any down sides provided you have enough grain for body/flavour. Just don't add loads.

Should I use out of date kit extract

I was given an out of date Tiny Rebel Cwtch kit once but I made it up anyway . IT WAS FOUL

    Brew strong and dilute

I once did a double brew. Brown ale - 40 L from a 30 L boiler. Turned out a reasonable brew but definitely didn't taste the same as a 20 L brew would have been. I suspect a different result from the more concentrated mash and different hop utilisation in the boil.

Why bother with brew days. This kit is stonking.

No. I enjoy my brewdays. I'm retired and it gives me the feeling of a job well done. If I want something quick and easy I just do a turbo cider.

    Cash or card

Another poll with insufficient options. What about happy to use both? Can't get rid of cash anyway, dissenfranchises too many people. How are you going to give a quid to a busker if you don't have cash?

    CML yeast recommendation

I just use hog norsk as a general purpose yeast - it flocculates well but isn't as clean fermenting as 5 or Nottingham. Leaves a little flavour behind.

    What did you brew today?

This morning having another go at a Grisette. Only done it once before and it was quite pleasant, basically a light Belgian pale ale. 4 gallon brew (18 L) GRAINS - 4.5 lb pilsner malt, 1 kg wheat malt, 500g smoked malt. HOPS - 25g hallertauer hersbruker (60m), 16g EKG (15m) , 25g saaz (0m), 8...

    Peppermint Stout?

Yes that's a good idea. I once made a batch of spruce ale from the Greg Hughes book smellt and tasted like some kind of cleaning product...

    to BIAB from kits

If you go Biab then space isn't an issue. And yes it's worth it because instead of that kit taste you're basically brewing first class microbrewery beer. In fact much better than a lot of pub beer. All you need is a boiler.

    Hop growing in northwest

I've had hops from them and they were fine. I just followed your link and then clicked on availability/delivery - looks like they'll dispatch them to you in November/ december. Which is the right time to be planting hops anyway. Gives you time to sort out your trellis.

    Duty increase.

Except as it's duty per litre of alcohol in the product then it does vary with the percentage alcohol in the beer. An 8% beer will have twice the amount of duty as a 4% beer.

    Bottle conditioning question

Conditioning time varies hugely with the ingredients of the beer. Hoppy, single malt beers are at their best very young because hop flavours and aromas fade quite quickly. On the other hand malt forward beers especially those with multiple grains and dark grains too take a few weeks for the...

    Electric cars.

I used to know a guy who's 2 reliant robins spontaneously ignited just at the point when repairs to get them through the MOT was more than the vehicles were worth. Both were parked up at the time and one was next to his neighbour's house who he'd previously had a falling out with. 2 birds with 1...

Appeal Court clears Andrew Malkinson of **** after two decade journey to prove innocence

There's something very wrong with a penal system that gives a longer sentence to a wrongly convicted innocent person than someone who is actually guilty

What are you drinking tonight 2023.

Lunchtime drink. Can't remember if I liked this one - I expect I'll find out when I've eaten me pukka chicken balti pie.

Ambient brewing and conditioning : Scottish Summer

You could do a Czech pilsner using cml hell yeast - it has a temperature range of 12 to 19 and I couldn't tell much if any difference in the result at these extremes. Also good for drinking young for getting most aroma from the saaz.

    What was your first car?

Mrs cwrw had a Sunbeam hatchback when we first got together, but first car we got together was a Peugeot 305 van. Bought it new and drove it til it wasn't worth fixing for the MOT at which point I swapped it with a guy for a 10 by 8 garden shed.
