    Hi all, at the end of fermentation I get a layer of very fine T90 hop pellet debris approx 1 cm below the surface maybe 1 cm thick. Beer is very clear at this stage.     I am thinking along the lines........2 gm for 10 mins, 5 gm for 2 mins, 10 gms at 90 deg c and 83 gm at 70 deg c for a hop that is around 10 % AA - I welcome any hop addition examples from readers / listeners.........

    I have tried pH papers in the past - they do not work. I am adding AMS which is HCl and H2SO4, this is dropping the pH, I have to hope into the right range.

    CHALLENGE - my water is 226 ppm hardness as CaCO3, alkalinity 115, Ca 75 Mg 9 chloride 68 SO4 117 Na 39 I currently treat 32 litres of water with 15 gm AMS solution and 1/3 campden tablet Am I in the right ballpark for 3.8% pale SMASH beers I am a BIAB man thanks

    You need to make the dosing syrup more runny, and your beer a bit stronger, which will give you around an extra 2 litres of product. But... I have always used a small plastic funnel and brewing sugar, with no problems at all, no clogging on the spout of the funnel.........
