    So this is basically all I had, and it's guesstimate. 2kg Minch malt 400g wheat 200g Cara Munich 2 150g biscuit malt 500g white sugar added with 15 mins left on the boil 15g magnum @ FWH 15g cascade + 15g talus @15mins 40g talus@flameout Yeast is Saisonstein monster OG 1.040

    I am completely bored of My scone. Two children of school sick. So I am starting a brew, I don't have enough grain but I will throw something together that will resemble a Saison.

    First up I would not mash at 69. I would drop the chocolate and roasted barley from the mash. I would add it at mash out to adjust the colour.

    Kegged the American amber, colour looks spot on. Added some of the slurry to the west coast IPA. Thats 2 beers kegged and 2 fermenting. I can start to look at some beers that take longer to brew.     I have Saisonstein monster yeast on the stir plate, the last time I brewed with this it tasted of bubblegum. Not exactly what I would expect in a Saison. If this happens again the yeast will be ditched and I will go back to french Saison yeast
