    Like most of my brews, they are "What if" types ....Crossmyloof fits that bill superbly, as they have such an extensive ant proven range.... Go for a Pseudo-lager... I have Just done one with CML Clipper and basic ingredients pale malt / munich / acid malt....Hopefully a summer session light...

    First Witbier.

    From a yeast point of view , I used Crossmyloof Wallonia recently ; what a cracking yeast , full of distinct traditional wheat beer flavours , clove, banana, spicy.... I fermented at 18-20 deg celcius.

    everyone has their own opinion as to when to bottle, but faster is always better for me....I ferment a lot of the time in an "open" bucket (yes I do have a lid !!)... but consider that leaving it too long would only lead to wild yeast infections or oxygen ingress if the beer had not enough CO2...

    From brew-day to bottling, what's your average elapsed number of days?

    My brew day to bottling day is on average six days for normal bitters / ales. This varies considerably, the longest I have in recent months is ten days for IPA / dry hopped beers, and the shortest was a Californian common with Kveik as the yeast @ four days.

    Have not tried their kits - but they did sell on UK Fleabay for a while.... I did try their Altbier yeast, (again Fleabay) and yes it was reasonably "characterful" , but it did stop slightly higher than I expected making the beer slightly less dry than I really wanted.
