Some ideas for a lager beer?

Looks like a fine brew Dads_ale. Might just give it a go.

Some ideas for a lager beer?

Hi. I'm going to be throwing a homebrew party soon. Personally I don't like lager and purely drink ales. My friend - who I would really like to come to the party - only drinks lager. I don't want to go through the low temperature lager making process. I was wondering if anybody has...

How much VWP will kill yeast?

Well, I've never been accused of that before!

How much VWP will kill yeast?

Thanks terry. That's what I needed to hear.

How much VWP will kill yeast?

I've recently made a rather small brew. It amounted to only 2.5 gallons. The initial fermentation took place in a fermentation bin and it was transferred to a closed fermentation container with an air lock. There has been a cold spot in my country, so I decided to but the fermentation container...

    Carafa 3 in red ales

I couldn't have put it better myself. Thanks foxbat. That's interesting. I suppose the next step is to experiment. Cheers!

    Carafa 3 in red ales

I would be very interested to hear your opinions on using carafa 3 (or indeed any other carafa) to produce a red ale. I was looking through a collection of recipes for red ales and noticed that some of the recipes seemed to obtain their red colour only from the addition of aproximately 2 oz...

    Alpha Acids and Hop Flavour

Thanks Chuffer. That answered my question. It seems that it depends on where you get your information from. The site I went to listed Admiral as a bittering hop. I suppose even bittering hops can be used as late edition hops.

    Alpha Acids and Hop Flavour

I suppose the question is, do the orangey-citrus flavours disappear during a long boil. If so, it seems rather arbitrary to refer to Admiral hops as bittering hops.

    Alpha Acids and Hop Flavour

I am interested in the relationship of alpha acids and the flavours that are often listed with them. I understand that there are different alpha acids and that they have different kinds of bitterness - humulone for instance has a smooth bitterness, whereas cohumulone has a sharper bitterness -...

Dry Hopping, Late Hopping and Hop Haze

First things first, I don't like using finings in my beer. There are two reasons why I don't want to use them. Firstly, I want everybody to be able to drink my beer (including vegetarians), and secondly, I'm a bit of a purist and I think that isinglass and gelatine violate the malt, hops, yeast...

    Flavour of Cara Red?

I'll be very interested to hear what happens there hoptoit. I'm certain that whatever has given my brew the elderberry flavour has something to do with the Pacific Gem. it might be it interacting with another ingredient or it might simply be a natural variety in the hop. Genetic diversity or...

    Flavour of Cara Red?

I ought to say, Jon, that I did save a little Pacific Gem to go in late in the boil. I think that a very small amount went in dry hopping too, but the NS and HM were definitely the dominant late hops

    Flavour of Cara Red?

Hi People. I recently made a red beer. I thought I'd borrow the malt profile from another recipe but give it a personal hop twist. I used Nelson Sauvin, because it's a real favourite of mine, and Huell Melon for flavour/aroma. For the bittering hop, I used Pacific Gem. I have never used...

A question regarding oxidation in fermentation under lock.

I have made a few brews recently and have adopted the method of allowing the initial fermentation to subside in a fermentation bin (maybe 2 to 5 days) and then siphoning the beer into a closed fermentation vessel under lock in order to let the fermentation complete. That is all well and good. I...

    General thoughts about the Break

Wow! Thanks everyone. All of your advice was really helpful. I won't be wasting so much beer on my next brew. :drink:

    General thoughts about the Break

I've just finished making a red ale and was - as always - disappointed to see how much wort was thrown away with the break. I would estimate that about 15% of the wort went down the plughole! Am I being too wasteful? I was racking the wort into the fermentation bin and could see the break...

Is my odd smelling brew ok?

I posted recently saying that a brew I've been working on had gone off. It had somewhere between a rotten egg smell and a worn sock smell. In the initial vigorous fermentation, there were no poroblems. I siphoned the beer into another container as soon as the krausen had subsided (2 days)...

    Cleaning, Sanitising, Sterilising Question

I have to tell you that I'm gutted. My first brew ever has gone off. It's never happened to me before. I've recently gone over to full grain brewing and the increase in equipment has led to an increase in potential infections. I'm now determined that I shall educated myself on the subject of...
