    Finally got round to trying this which most of us have seen on Hugh's programs. I have to say it doesnt smell that elderflower-y. I hope it comes as it matures.

    i've heard that about cat pee, but to be honest i dont know what that smells like! I'll have to hunt around for the best elder trees then, didnt know there were so many types.

    When is the best time to pick elderflower? There are nice full blooms out here but i've picked a couple and they arent that fragrant yet. Infact not at all really. When is the best time to pick for best flavour/aroma and yeast content?

    I attempted a strawberry wine. Grape juice from carton, tinned strawberries, tannin, nutrient, yeast and sugar. Well i've bottled it, i figured all i'd lose was 6 corks if it doesnt come good. Thought that there isnt much difference it sitting in a DJ or sitting in a bottle. Or am i wrong?!

    Just had a little taste of my wine. SG is 1002, and it tastes of wine but has a bit of a bitter aftertaste. Will this mature out in the bottle, or is the whole batch wasted? Its about 6 weeks old, and i fined it last weekend. It hasnt cleared much though only a little. Should i bottle or chuck...

    how long before fining/bottling?

    thanks, i racked it off the sediment yesterday and added the minimum amount of fining for the amount of wine i had. I will let it drop for another week and bottle next weekend i think.

    peach wine started

    Youngs peach wine kit on the go tonight. Really hoping this one turns out nice - i love peach! Not sure if i read the OG reading right, does 1108 sound anywhere near possible? (edited for spelling)

    thanks for the info. I moved it somewhere cooler and it has dropped quite a bit of sediment and cleared up quite a lot too. Its 4 weeks old now. Do i rack it again off the sediment? When should i be bottling it?

    Is that the starting gravity? If i read my hydrometer correctly it was 1076. Does that sound about right?

    Racked today into a new vessel. Smelling like wine, but VERY strong. Starting to clear up a little.

    I actually used tinned this time, since strawberries are out of season just now i figured the fresh would be lacking in flavour. 2 tins in this batch - i've written down exactly what went in so if it works and tastes good i'll be able to do it again the same.
