    What kind of cider did you use? I've been looking for a mulled recipe now that it's the season but I don't really know what to start with.

    Excited to crack open a bottle of Aspall premier cru tonight! Been a while since I've had some and I'm really looking forward to a cozy evening with it.

    I will say hearing the phrase "Why does it smell like a Rhino farted in here" from my wife when I opened a bottle of sulphite ailed cyser had me in stitches, but if you let it degas it was actually quite tasty.

    I hope the sulphites don't affect the taste too much, I've got more experience with mead but there it was possible to age it out.

    I've brewed the MaltMiller Leffe Clone and I quite enjoyed that, it ended up a little darker than the "real" thing but the taste was pretty close to spot on.

    :doh: That's what happens when you try to type "blonde" while thinking about wheat beers. Leffe definitely isn't one of them, you are correct.

    No matter what else I try Leffe Blond always takes the top rung for me. If I had to chose a close contender I love a good Helles but wheat beers just get me.

    If it's SO2 suppressing the fermentation it might be worth flushing the headspace out, could be that it's just sitting on top and diffused in the liquid and so it's hampering the fermentation which means there's no CO2 generated that could flush it out? Something else that might be worth trying...

    Do you have any specific recommendations for a juice brand to use / yeast? I've used kveik yeasts for mead in the past and they fermented super nicely so I'm wondering if I can do a similar thing with cider.

    In a perfect world I could do it all, but for now I want to give cider making a serious try! I made one batch that had a severly sulphorous smell and I'm determined to make something drinkable!

    It took me wayyyy too long to find the current batch of friends 🤣 I quite enjoyed making mead and I quite enjoy drinking cider so I'm just going to go with that in my trusty SS Brewbuckets
